Butterflies Tier Cake with Chocolate Butterfly Topper

I don't have time to blog this whole cake... 3 cakes in 2 weeks is WAY too much!    I did this cake just like the black and white circle cake.  I had the same problem with the fondant rippling where the cake layers... I've really got to figure out how to avoid that.... I must be doing something wrong.

The butterflies.... Chocolate butterflies are easy and look great.  Find a pattern online for the wings and print it out - cover your pattern with wax paper.  I make a bunch of wax paper cones ahead.  Melt your chocolate - add a bit of oil of you need to.  Use the cone to make your outline - let it set, then fill in with other colours.  Its just like colouring.  When you're done the wings and they've set, peel off the wax paper.  Put a line of chocolate on the cake and sit the wings in - hold until it sets.  Voila!  A butterfly!  I also make dragonflies this way.

To put the butterflies on a stick I just made a puddle of chocolate on waxed paper and insert a skewer or toothpick.  Prop it up until the chocolate is well set.  This is your base for the butterfly.

I love your Butterflies Tier Cake! I am also loving your blog. How wonderful to be able to read that you created those lovely cakes and stumbled across issues along the way. I know that sounds weird and it was probably not wonderful for you, but looking at Cake Central all the time can make a new-comer a little intimidated. Thanks Jennifer! I'm new to cake decorating - really its been only a year that I've been decorating more and trying more new ideas and I agree - often you don't hear about the problems! My first 3 tier cake turned into a 2 tier cake when the top cake crumbled under the weight of the fondant! I can smile now but I was selling it! It turned out beautiful at 2 tiers and thankfully the client was understanding!

For the colours I just use baking chips (in a pinch I've used coloured chocolate chips but they're very thick)

I'm sure a purist would recommend the best quality chocolate you can buy. I use the same chocolate as I bake with - Waterbridge Belgium Extra Dark. This is the cheapest way to buy fairly good baking chocolate - it comes in huge bars for less than $4.
